Jambalaya

 

Here is an easy Cajun recipe that is good for serving a crowd while accommodating lots of dietary needs like vegans and gluten free! Leave out the sausage and add red or kidney beans for an easy vegan version.

Ingredients:

4 celery stalks

1 medium onion

1 green pepper

2 14.5oz cans diced tomatoes with green chilies

1-2 teaspoons smoked paprika

1 cup rice

hot sauce

2 cups veggie broth or water

Cajun spiced sausage such as andouille

Instructions:

Finely dice the celery, onion and green peppers and sauté them in a large pot. Add in the veggie broth, diced tomatoes, smoked paprika, and rice and simmer until the rice is cooked.

Grill the sausage, (or brown in a pan) slice and add to the rice mixture when it is done. Or leave it on the side if you are serving vegans or vegetarians. The rice mixture will still have a spice smoked flavor from the green chills, and paprika. You could also use chicken broth and add in shredded chicken. Serve with some hot sauce and enjoy!
