Dinner Recipes

Spicy Mac and Cheese
Serve with hot dogs, bratwurst or veggie dogs cooked over a campfire!
1 box tight spiral pasta
1 c sour cream
1 tbs butter
1 c shredded sharp cheddar
1 c shredded swiss
1 c shredded parmesan 
2 tbs spicy brown mustard (the secret ingredient!)

Cook and drain pasta as directed. Over low heat, combine pasta, sour cream, butter, cheese, and mustard. Enjoy!

Chicken Pesto Pasta
Serve with garlic bread and a fresh greens salad!
Chicken breast or tenders
Italian spices
olive oil
Farfalle pasta (bow tie) or Rotini
pesto sauce, Classico or other brand
parmesan cheese (topping)


Saute chicken and cut into bite size pieces. Cook pasta as directed. Combine chicken and pasta with the pesto and serve!
 

Frito Pie
ground beef or turkey
chili seasoning
2-3 cans of various beans drained
chopped onion
1 can diced tomatoes
1 can tomato paste
shredded cheese
sour cream
fritos


Brown ground meat and season as directed on chili mix. Add in diced tomatoes, tomato paste, beans, onions and simmer. Serve over frito chips topped with cheese and sour cream.

 

Thai Peanut Stir Fry
Broccoli, green beans, onions, red onion, red peppers, green peppers, zucinni, yellow squash, carrots, scallions, and pea pods.
garlic, ginger, tamari (soy sauce), red pepper flakes, sesame oil, brown sugar, Limes, cilantro

Chicken

Peanut Sauce
peanut butter, soy sauce, limes, garlic, red pepper flakes, peanuts, and hot water

Chop all veggies and stirfry. Add in garlic, soy sauce, brown sugar and red pepper flakes to taste. Cook chicken and cut into bite size pieces. Combine all ingredients for peanut sauce. Chop fresh cilantro and lime slices. Combine veggies and chicken. Serve over rice noodles. Top with peanut sauce, lime and fresh cilantro.
Corn Chowder
5-6 potatoes
milk
can of corn
can of creamed corn
1 onion chopped
butter

In a large pot fry onions in butter. Add diced potatoes and cover with water. Cook until soft. Add corn, creamed corn, milk and cream. Heat carefully. Do not scald. Serve with quesadillas.
Campfire Stew
Canned Vegetable Soup
hamburger
canned mixed veggies

Cook soup as directed. Add extra can of mixed veggies. fry and crumble hamburger. Add to soup after draining grease. Serve with saltines crackers or crescent rolls cooked over the fire! (see below)


 

Navajo Stew with Fry Bread
1 butter nut squash diced
garlic
3-4 cans various beans
1 jar napolitos
1 can hominy
1 can green enchilada sauce
1 can tomatillo sauce or tomatillos
Chicken

Bisquick
Flour
Milk
Oil

Cook chicken and cut into bite sized pieces. Chop garlic and fry in oil. Add in diced squash and brown. Add in enchilada sauce, beans, tomatillo sauce, hominy, and chicken. Just before serving add in the chopped napolitos. Serve over fry bread.

Fry Bread
Mix flour and bisquick in a 2 -1 ratio. Add milk until a dough like mixture forms. Roll into 4 inch x 1/4 inch thick and deep fry in 2 inches of hot oil. until golden.
 

Stuffed Shells in a Pot with Italian Sausage
1 package shells or favorite pasta
1 jar favorite spaghetti sauce
1 lb ground Italian sausage
1 small container ricotta cheese
1 cup mozzarella cheese
Parmesan cheese

Cook pasta as directed. Fry up Italian sausage and crumble. Heat sauce. Mix in ricotta, sausage, and pasta. Top with mozzarella and parmesan cheese. Serve with a fresh greens salad and garlic bread.

ground beef or turkey
taco seasoning
refried beans
guacamole (see below)
chopped onions
chopped tomatoes
chopped olives
chopped cilantro
shredded cheese, cheddar or Mexican Mix
sour cream
salsa
tortillas

Chop all veggies. Fry ground meat and add taco seasoning as directed. Heat up refried beans. Heat tortillas. Fill your tortilla with the ingredients you want and enjoy with some chips, salsa, and guacamole.

Black Bean Sweet Potato Burritos

Sweet potatoes cooked and mashed
Black beans drained
one onion diced
salsa
cilantro
tortillas
cheese
sour cream


Combine cooked sweet potato and drained black beans and heat. Fry onions and add to sweet potato and bean mixture. Spoon into warmed tortilla. Top with fresh cilantro, salsa, cheese, and/or sour cream.

Salad and Lunch Recipes

Yummy Tofu Salad
One small white onion
Two cups red grapes
One 6oz package sliced almonds
One package extra firm tofu
1/2 cup mayonnaise
1/4 tsp salt
1/4 tsp pepper
2 tbs extra virgin olive oil
Cut tofu into approx 1/2 by 2 inch peaces. Cook tofu in a frying pan with salt, pepper, and olive oil until crispy. Allow tofu to cool before adding to salad. Wash, and then slice grapes in half. Slice and Chop onion (approx 1/2 cup). Combine tofu, grapes, onion, mayo, and almonds in a large bowl. Serve on toasted wheat or pita bread.
Pasta Salad
1 jar roasted red peppers chopped
2 small zucinni diced and sauted
2 small summer squash diced and sauted
1 can sliced black olives
1 red onion sauted
2 small jars artichokes
8-16oz crumbled feta cheese
1-2 boxes multi-colored spiral pasta
½ bottle Zesty Italian Dressing
Cook the pasta as directed and run through cold water to cool it off quickly. Saute the zucinni, summer squash, and red onion. Chop up the olives, artichokes and red peppers. Mix with the pasta when it is cooled off. Add the feta cheese and salad dressing last and chill until serving. This salad goes great with sliced watermelon.
Asian Cole Slaw1-2 bags cole slaw mix.
(carrots, cabbage)
Asian salad dressing
toasted sesame seeds

Mix just before serving. Great with fried chicken and watermelon!

chopped onion

Breakfast Recipes

Berry Chocolate Chip Pancakes
Your favorite Pancake mix (We use Krusteaz Brand)
semi sweet chocolate chips
sliced strawberries

Mix pancake batter as directed. Place sliced berries and 
chocolate chips on the pancake before flipping. 
 
 
 
 
 
 
Breakfast Burritos
Eggs
Sausage
cilantro
salsa
shredded cheese
1 onion sliced

Scramble eggs. Brown Sausage. Saute onions. Warm tortillas and fill with what ever ingredients you wish! Top with salsa.

Bus Muffins

Eggs
Ham slices or Canadian Bacon
Cheese slices
English muffins

Toast English muffins. Scramble eggs and fry in sandwich size patties. Fry meat. Stack egg, meat and cheese on a muffin and serve. Top with hot sauce!

Oatmeal Buffet
Raisins
Chopped green apples
chopped walnuts
cinnamon
dried cranberries or blueberries
granola
Oatmeal

Cook oatmeal as directed and add your own toppings!
Cinnamon Apple Walnut Pancakes
Your favorite Pancake mix (We use Krusteaz Brand)
1 cup applesauce
cinnamon
chopped walnuts

Mix pancake batter with applesauce and water. Place cinnamon 
and walnuts on the pancake before flipping. 

Fall Pumpkin Pancakes
Your favorite Pancake mix (We use Krusteaz Brand)
1/2 cup Pumpkin Pie filling
Nutmeg, cinnamon,
chopped walnuts

Mix pancake batter as directed. Add pumpkin pie filling and spices. Add walnuts before flipping.
Banana Chocolate Chip Pancakes
Your favorite Pancake mix (We use Krusteaz Brand)
semi sweet chocolate chips
1-2 mashed bananas

Mix mashed banana and water. Add pancake mix. Place chocolate chips and/or walnuts on the pancake before flipping.

 

 

Fruit Salad
2 red apples
2 green apples
1 orange
1-2 bananas
1 kiwi
small can of chopped pineapple
red or green grapes
Any other fruit you like

Chop all fruit into bite size pieces. Mix!

Scrambled Egg with Spinach and Feta
Eggs
Spinach
feta

Scramble eggs and cook. Add in spinach and feta. Cover and let cheese melt.
Scrambled Eggs with Ham and Cheese
Eggs
Ham chunks
Shredded Cheese

Scramble eggs and cook. Add in ham. Top with cheese. Cover and let cheese melt.
Crepes with Apple Filling
8-10 Apples finely chopped
1/2 cup brown sugar
1 tsp cinnamon
butter

Crepes
4 eggs
1/4 teaspoon salt
2 cups flour
2 cups milk
1/2 melted butter
1 tsp baking powder

Combine filling and cook down in a pot. Combine crepe ingredients and cook very thin pancake size crepes. Fill with apple filling and top with whipped cream!

Fresh Fruit Salad

Cooking over the campfire

Popcorn!

Put a small bit of oil on the bottom of a sturdy pot. Pour in popcorn and shake over the fire until popcorn pops.
 
S'mores
Marshmallows
Hershey's Chocolate Bars
Graham Crackers

Toast marshmallows on a stick over the fire. Eat between two graham crackers and a hershey bar.
Crescent Rolls
Pre-made crescent rolls
tinfoil

Wrap the end of a thick stick with tin foil. Wrap 1 or 2 crescent rolls around the stick on the foil. Toast over the fire until it easily slips off the tinfoil.

 

 

Banana Boats
bananas
chocolate chips
marshmallows
tinfoil

Slit open one side of the banana peel. Scoop out 1/3 of the banana. Place bits of marshmallow and chocolate chips in the banana. Replace the peel. Wrap in foil and place in the coals until chocolate is melted.
Baked Apples
butter
cinnamon
Core an apple. Place butter and cinnamon in the core. Wrap in tinfoil and place in the coals until soft.
