Thai Chicken Rice Bowls

Here is a new recipe from this summer that was a big hit! It’s super tasty, and you can tailor it to your own tastes! It has 4 basic parts, chicken, steamed vegetables, rice, toppings and sauces. It’s a bit different each time we make it.  What would you put in your bowl?

Ingredients and Directions:

Rice
Jasmine Rice
Directions: Start your rice in a large pot first and cook while prepping the toppings and vegetables.

Chicken
brown sugar
coconut milk
soy sauce or Tamari
Peanut sauce

Directions: Cube your chicken and brown it in a large pan. Add the coconut milk, soy sauce, brown sugar, and about a cup of peanut sauce. Simmer on low until other ingredients are ready.

Vegetables
green beans
match stick carrots
red and yellow peppers
cole slaw mix
Directions: Cut your vegetables to bite size. Throw in a large pot with a few inches of water in the bottom, or use a steamer if you have one. Steam until veggies get a bright color, so that they are cooked, but still have some crisp to them.

Toppings:
1 cup crushed peanuts
1 diced cucumber and mint
1 bunch cilantro diced
1-2 limes sliced into wedges
1-2 diced mangos
soy sauce
peanut sauce
srirachi
Directions: Place your toppings in various bowls for your guests to select!

To construct your bowl, place rice first in the bottom of your bowl. Add chicken and/or vegetables next and top with your favorite toppings. Depending on what king of peanut sauce you used, it may be spicy enough, but you can add sriracha if you need more of a kick!
