One small white
onion
Two cups red grapes
One 6oz package
sliced almonds
One package extra
firm tofu
1/2 cup mayonnaise
1/4 tsp salt
1/4 tsp pepper
2 tbs extra virgin
olive oil
DIRECTIONS:
Cut tofu into
approx 1/2 by 2 inch peaces. Cook tofu
in a frying pan with salt, pepper, and
olive oil until crispy. Allow tofu to
cool before adding to salad. Wash, and
then slice grapes in half. Slice and
Chop onion (approx 1/2 cup). Combine
tofu, grapes, onion, mayo, and almonds
in a large bowl. Serve on toasted wheat
or pita bread.
