Apple Filling:
Ingredients
- 10 peeled and cubed apples
- 1/2 cup of brown sugar
- 1 teaspoon of cinnamon
- a wee bit of margarine
In a heavy frying pan, throw everything in. and cook on medium
heat, cover, and stir occasionally. That's really about it.
In about 20 minutes it'll cook down to a nice compote that's oh
so yummy.
Crepes
Ingredients
4 eggs
1/4 tsp salt
2 cups flour
2 cups milk
1/2 cup melted butter
1 tsp of baking powder
Mix everything up nice & smooth, then set it aside for a half an hour
to rise.
Now comes the tricky part, getting the griddle temperature right.
Start out around medium heat on your stove, and make some
experimental "silver dollar" sized prototypes.
You want to get a nice fluffy crepe, that you can flip when the
top starts getting bubbles coming through, revealing a golden brown
"lace doily" pattern on the cooked side. Play around until you get
the temp right. Now go nuts, spoon the compote in a nice line down
the middle and fold the sides up around the filling. Try topping
with whipped cream.
Mmmmm....yummy.
